You’ve heard about farm to fork and trawler to table dining, but within our terminals, there’s a new culinary trend hitting the tables – paddock to (boarding) gate.
When you next find yourself at Brisbane Airport, follow your nose towards the kitchens turning iconic local Queensland produce into Brisbane’s Best Bites.
The paddock to gate philosophy celebrates produce grown in Queensland’s rich soils and crafted by our homegrown talent; gifting travellers with a memorable first or last taste of the State before they take off.
From locally caught Mooloolaba prawns to flavoursome veggies grown in fields less than 30km from the terminal doors, our travellers are spoilt for culinary choice.
Discover world-class produce and the benefits of dining local when you treat yourself to delicious dishes made with ingredients from these local suppliers.
Mooloolah River Fisheries, Mooloolaba, Sunshine Coast
Chances are you’ve already tasted Mooloolah River Fisheries wild-caught seafood while meandering along Mooloolaba Beach or dining at The Deck on Parklyn. However, if you’re trading the Mooloolaba River views for vistas of our runways, you’re still able to enjoy the catch of the day before you board. Established in 2000, Mooloolah River Fisheries wears the title of Queensland’s leading supplier of wild-caught eastern ocean king prawns. Taste their catch at Graze Grill & Bar with a Mooloolaba Prawn & Mango Salad and Italian Prawn Pasta, Mezze Za Za with a Fish or Calamari and Chips, and Newstead Brewing with Fried Calamari, Beer Battered Fish and Chips.
Burleigh Brewing Co, Burleigh, Gold Coast
For Burleigh Brewing Co, malt barley, quality hops, water, and time are the only ingredients required to make one of southeast Queensland’s most beloved beers. Inspired by traditional brewing methods, the brewmasters at Burleigh proudly slow brew each batch to ensure it has an all-natural freshness. Try their philosophy of taking it slow when you’re on the go, enjoying a Burleigh Bighead, Twisted Palms Pale Ale or Lager from The Lord Lamington, The Aviary, Windmill & Co and Bound.
Simon George and Sons Produce, Rocklea, Brisbane
Simon George and Sons Produce is as local as it gets (26km from the terminals to be precise). Sixty years ago, Simon George Senior took his produce to the Brisbane Markets for the first time, a lifetime ago from his distribution now to premier restaurants and eateries along the Gold Coast, Sunshine Coast and Brisbane. Next time you savour a Classic Caesar Salad from Graze Grill & Bar or bite into a grilled chicken salad from Newstead Brewing, take a moment to savour the flavoursome veggies grown in Brisbane’s own soil.
Green Beacon, Teneriffe, Brisbane
As an early entrant into the Brisbane craft beer scene, Green Beacon established itself as a refreshing, recognisable icon. Green Beacon’s commitment to creating ‘world-class beers that are perfectly balanced, consistently high quality and most importantly, incredibly drinkable’ has seen them become Brisbane’s only brewery to win AIBA Champion Australian Brewery three years in a row (2017 – 2019). For a sip of world-class brew, stop by The Common in the Domestic Terminal and treat yourself to their Tropical Pale Ale.
Timmaz Farm, Moodlu, Caboolture
Did you know that the juicy lettuce you devour in a classic burger, Greek salad or chicken pita from the Lord Lamington, The Aviary and Windmill & Co wasn’t actually grown in soil? Their lettuce is grown using hydroponic farming techniques on Timmaz Farm in Brisbane’s northside. With all nutrients supplied to their farm of vegetables via water, Timmaz Farm conserves more water and increases its output of crisp lettuce.
Diablo Co, Woombye, Sunshine Coast
When you’re in the mood for a beverage that’s refreshing and 100% Queensland-made, look no further than Diablo Co. from the Sunshine Coast. Back in 2017, local venue owner Dimitris Limnatitis spotted a gap in the market for a beer alternative that’s made by Queenslanders for Queenslanders. After calling in favours from local sugar cane and ginger plantations, Diablo Alcoholic Ginger Beer was born. For a taste of this devilishly delicious brew, look for the blood-red Diablo stamped bottle at the Lord Lamington, The Aviary, Windmill & Co, Coffee Royal.
Sunripe, Meadowvale, Bundaberg
With 1.4 million square kilometres of agricultural land in the Sunshine State, there’s no shortage of food bowls to procure from, including Sunripe Farm in Bundaberg. Bite into five-star tomatoes, watermelon and zucchini and taste field-to-fork dishes at their finest with a chicken schnitzel roll and protein salad from Lord Lamington, Greek salad and chicken pita from The Aviary, and a Freekeh and Pomegranate Salad, and Fresh Herb and Quinoa Salad from Windmill & Co.
Sirromet Wines, Mount Cotton, Brisbane
After hearing ‘there’s no such thing as a great wine from Queensland’ from a Victorian associate, Terry Morris set out on a mission to show the rest of the nation why they were wrong. And just like that Sirromet Winery was born, combining Brisbane’s rich soils and traditional vinification. Treat your palette to floral notes of rose petals, lifted peachy aromas, and toasty oak spices with a glass of Sirromet’s wine collection at Newstead Brewing.

Whether this title is earned by their simple philosophy of ‘source smarter, roast better, reduce the impact on the environment, care about the community and share our love of coffee’ or their commitment to doing their best in their roasting, training, and extracting coffee, Bellissimo has demonstrated excellence in producing a perfectly blended brew time and time again. Bound in the Domestic Terminal has been named as a ‘friend of Bellissimo’, offering their quality beans to travellers.
Balter Brewing Company, Currumbin, Gold Coast
Six Aussies and an American walk into a bar and never come out… it might sound like the start of a joke but really, it’s the origin story of how Balter was born. Balter (meaning: the sense of enjoyment you get from doing something you love, just for the thrill of it) perfectly describes travelling, holidaying, and taking off to enjoy an adventure. What better beer to accompany our buzzing in-terminal atmosphere? For a fruity punch, order a can of their Currumbin brewed beer from Mi Casa Burritos and Yo Sushi in the Domestic Terminal.
Veneziano (Coffee), West End, Brisbane
Veneziano Coffee Roasters may have venues all around Australia, but their airport footprint starts with Lord Lamington, The Aviary and Windmill & Co. Veneziano upholds a strong commitment to bettering our local community by sustainably sourcing their coffee beans and running initiatives that make them a certified carbon-neutral business. When you sip a Veneziano coffee, you’re tasting the fruits of labour that left the world in a better place than how it was found.
Nosferatu Distillery, Bowen Hills, Brisbane
Nosferatu Distillery’s gins travel less than 10 food miles to arrive in your glass at the Lord Lamington, The Aviary, and Windmill & Co, ready to indulge you in sweet aromas of orange and spice. Sure, the taste is great, but be sure to check out the bottle. Nosferatu’s Blood Orange Gin (awarded the Best Gin Bottle in Australia at the Australian Gin Awards in 2018) is a staple in many cocktails around the Airport. Keep your eyes peeled for the ominous clawed figure on the blood orange bottle to try it.
Laceys Hill Distilling Co., D’Aguilar, Brisbane
‘Mother Nature is the true artist and our job is to allow her to shine’ – Marco Pierre White. John and Cass from Laceys Hill Distilling Co. took this message to heart when they began distilling in the gorgeous countryside of Laceys Hill. Do we believe their stunning location and produce had a noticeable effect on the fresh tastes of their gin? Absolutely! John and Cass began their small-batch, from-scratch, distilling operation in 2013 and are proud to say that over 10 years later, they serve bottle shops and bars from Moreton Bay to Brisbane City, including Coffee Royal in the Domestic Terminal.
Tamborine Mountain Distillery, Mount Tamborine, Scenic Rim
After seeing that their Apricot Brandy earn 2023 Brandy of the Year in the London Spirits Competition, you know the team at Tamborine Mountain Distillery are no strangers to making exceptional botanical distillations. While a trip to their gorgeous heritage-styled distillery on Tamborine Mountain might be difficult when you’re minutes away from take-off, a visit to Coffee Royal will have you tasting Queensland’s OG distilling flavours.
White Lies Brewing Sumner Park, Pullenvale, Brisbane
What first started as the dream of an Occupational Health and Safety worker brewing out of his Pullenvale residence in 2015 has now frothed into a brewery with 17 Australian and International Beer Awards (AIBA). White Lies Brewing is an icon of success for every hopeful homebrewer, keeping up with big competitors in the beer industry thanks to its unwavering commitment to never substituting quality. White Lies has grown to own two Brisbane cellar doors, a production brewery and distillery behind a delicious range of beers, gin, vodka and whisky that can be sampled at Coffee Royal.
