The Independent as the name suggests is here to deliver new flavours, new experiences, and a new style of airport dining. The Independent will feature a range of independent suppliers from seafood to spirits. The chef that has taken over our kitchen for this ‘chef in residence’ is Luke Mangan.
Luke Mangan renowned as a ‘chef to the stars’ is recognised for his award-winning high-end fare at Glass Brasserie at Sydney Hilton, the Eastern Oriental Express, P&O Cruises Australia, Luke’s Table at the Pylon Lookout at Sydney Harbour Bridge, cooking for former US President Bill Clinton, Sir Richard Branson, Tom Cruise and Danish Crown Prince Frederick and Princess Mary.
